Stuffed Bell Peppers with Quinoa and Beans

- Preheat oven to 375°F (190°C).
- In a bowl, combine cooked quinoa, black beans, corn, salsa, cumin, salt, and pepper.
- Stuff each bell pepper half with the quinoa mixture.
- Place st■ peppers in a baking dish and cover with foil.
- Bake for 25 minutes, remove foil, sprinkle with cheese, and bake for another 5 minutes.
Notes
Garnish with chopped cilantro before serving.
