- Preheat oven to 375°F (190°C).
- Heat olive oil in a pan over medium heat.
- Add onion and garlic, sauté for 3 minutes.
- Add ground turkey, cook until browned.
- Stir in cooked quinoa, parsley, salt, and pepper.
- Stuff bell pepper halves with turkey mixture.
- Place in a baking dish and bake until peppers are tender, about 30 minutes.
Notes
Serve with a side salad.
