- Heat olive oil in a large skillet over medium heat.
- Add sweet potatoes and bell pepper, cook until tender, about 15 minutes.
- Stir in green onions, cook for 2 more minutes.
- Make 4 wells in the mixture, crack an egg into each.
- Cover and cook until eggs are set, about 3 minutes.
- Season with salt and pepper, serve warm.
