Vegetable Stir-Fry with Tofu

- Heat sesame oil in a pan over medium heat.
- Add tofu and cook until golden brown, set aside.
- Add bell peppers, snow peas, and mushrooms to the pan.
- Stir-fry for 5-7 minutes, add tofu back in.
- Add soy sauce, cook for an additional 2 minutes.
- Serve over jasmine rice.
Notes
For extra flavor, add a splash of rice vinegar.
