Vegetarian Stuffed Bell Peppers

- Preheat oven to 375°F.
- Cut the tops off bell peppers and remove seeds.
- In a bowl, mix quinoa, black beans, corn, salsa, and half of the cheese.
- Stuff bell peppers with the mixture and place in a baking dish.
- Top with remaining cheese and bake until peppers are tender.
Notes
You can add other vegetables or spices to the filling.
